The importance of raw foods

Most raw foods offer much higher levels of nutrition than if you eat them cooked (one exception being tomatoes, which release more of the antioxidant lycopene when they're cooked). Both vitamins C and B complex vitamins are destroyed with heat and leaked out in water. Raw foods also provide enzymes and phytochemicals in their natural state - which is why proponents of the raw food diet call non-cooked food 'living' food.
Try to eat at least some of your meals or meal components raw; not just this week, but always. If you find a lot of raw fruits and vegetables hard to digest, they can easily be turned into juices, soups or purees, which all eliminate any likelihood of flatulence and indigestion.
